This is a smoked beef sausage packed with pieces of pork fat. The beef gives it a clean, serious bite. The pork fat melts a little when you warm it and stays rich when you eat it cold.

It is fully cooked and made for slicing. Cut it thin. Put it on bread. Eat it with hot tea. That is how this sausage is supposed to be eaten — not rushed, not covered in sauce, just meat, fat, bread, and tea.

Hardwood-smoked on the outside. Beef and pork fat on the inside. Simple and filling.
