Lightly Smoked Pork Sardelki (сардельки)

These are lightly smoked pork links in the old Slavic style (сардельки). They sit between a plain cooked sausage and a fully smoked one — just enough smoke to add flavor, but still soft and mild.

You can slice them cold and eat them as-is, or drop them in boiling water for a few minutes so they plump up and get juicier. They’re good pan-fried too. Simple sausage, not heavy on spice.
